The largest water deposits in the world are the oceans (salt water), and only a small percentage is sweet water in rivers and lakes. The water cycle means that surface ocean water will evaporate thanks to the sun, become clouds, move to the continents and fall as rain. Rain will filter through the ground and eventually appear as a river. Drinking water.
No matter what material bridges are made of (but specially metal), the sun will heat it up during the day and they will become cold at night. Heat will expand the material and cold will shrink it, so if there are no gaps the whole structure would eventually warp and perhaps collapse.
